Dine and Dash Chicken!

This is one of the easy go to meals. When your energy is low, you want a meal with little prep. Or even one that can be prepared ahead of time and stored in the fridge till you cook it. Its simple yet filling. I hope you enjoy!

You will need Chicken breasts, 1 per person ( or 1/2 per child) Cubed

Seasoning to taste. I use a local Alaskan Seasoning which is similar to Mrs Dash and seasoning salts ( but without the preservatives )

Onion

Green pepper

Potatoes, 1 per person cubed.

Carrots.

Shredded cheddar cheese. ( optional)

Cube your potatoes and pre cook. I do this by tossing them in the microwave with some olive oil. This softens them up and makes them cook faster.

While those are pre cooking, cube your chicken and dice up your veggies.

Create a foil packet. I do this by using two layers of foil and folding the bottom over the top. Place your raw chicken, potatoes and veggies in a bowl. Toss with olive oil and seasonings. Mix well and put inside your foil packet.

Bake in the oven at 325 till chicken is cooked through. In my toaster oven it took about 35 minutes.

Optional When you chicken and potatoes are cooked through, sprinkle with cheddar cheese and allow to melt.

Serve your awesome and easy meal.
